    Here I am....it's 1:14 PM and I have to leave soon for work. I haven't had a thing to eat and now I'm going to have to eat on the run at some fast food establishment....ARGH!!!!!!!!!!!!!!!!

    To make matters worse....Lionhawk (my other half) is watching the food channel. It's killing me!

    Thought I'd start a thread on food and some good eats. Now please don't be offended if you are a vegan...there will be plenty of vegan receipts available I'll make sure of that. But be advise I occasionally eat meat....so sue me! I really try to keep the meat consumption down becasue my grandaughter is a staunch vegan but she forgives me.

    Here is one to start which can be adjusted to suite your taste....EASY PEASY!

    I was just thinking of posting my Stevia Sweetened Chocolate Bar recipe in The Sense of Taste when you started your thead. cheef
    I think it is a good idea to get a fresh start on this topic.

    So, Stevia. It is a healthy plant extract sugar substitute.
    It may take some getting used to if you are addicted to sugar.
    It changed our lives around here in dental health and such things.
    If you just start sweetening your morning coffee to taste with it to acclimate,
    it does not take long at all to adjust to Stevia.

    I will be providing photos of my favorite deals on good brands of the ingredients I use here.

    This will make one large 3 Oz bar.
    It is very easy and takes no time at all.
    In a small microwave safe dish combine:

    1 Tablespoon Coconut oil.

    20 Drops Stevia Extract

    2 Teaspoons Vanilla
    Make your own by splitting 10 vanilla beans and placing them in a fifth of gin.
    Remove some first to make room, of course.
    A bottle will last a long long time.
    It requires at least 3 months or so in a dark pantry.
    The longer is sits the stronger it will be. Delightful.
    Until then, I guess it is the expensive crummy store brand.

    After these 3 ingredients are mixed in the dish.
    Chop 3 ounces of Bakers Chocolate
    Even more finely chopped than this photo is better.

    Place the dish of liquid ingredients in the microwave for 1 minute.
    Remove the dish and add the shredded chocolate stirring and stirring until it begins to become smooth.
    If necessary, place the bowl back in the microwave for 30 seconds and continue stirring until smooth.

    I just place a sheet of wax paper on the same cutting board I use to cut the chocolate.
    Pour the chocolate slowly in the center of the wax paper and use a small spatula or something to spread in into somewhat of a bar shape.
    Place in the refrigerator for a couple of hours.
    Remove and cut or score and break into desired size pieces.
    Store refrigerated in plastic container.

    Heres another tip:
    There will be a lot of chocolate at the bottom of the bowl that time consuming to get out.
    I just add 12 drops stevia and 1 teaspoon vanilla to the bowl and blend in 3/4 cup, or so, plain greek yogurt.
    You wind up with a bowl of delightful sugar free chocolate yogurt treat while waiting for the chocolate to set!

    And, I forgot to mention, it is fun to get creative with the addition of chopped nuts or coconut, or something placed on top of the bar before setting.
